To complete the course, you will need access to the following:

- Receptacles for storage and display purposes

- Appropriate changing facilities
- Personal protective equipment relevant to job role
- Appropriate facilities for handwashing

- Current plain English regulatory documents distributed by the commonwealth, state, territory or local government food safety authority
- Australia New Zealand Food Standards Code
- Current organisational hygiene and food safety policies and procedures
PREREQUISITE
There are no prerequisites, you can start immediately (although you must have access to a Commercial Kitchen). This course covers the requirements for you to become a nationally recognised Food Safety Supervisor.
Whilst there are no training prerequisites, there are some requirements around language, literacy and numeracy. In order to complete the online courses that the Australian Institute of Accreditation provides on its website, you should be able to perform everyday tasks such as;
- Using an instant messenger tool
- Using email at work
- Responding to customer complaints
- Following a recipe

The Assessment Process
To complete your Food Handling course online in NSW, you’ll need to show the skills you’ve learnt through a Performance Evidence Video Submission and a Third Party Observation Report:
1. Performance Evidence Video Submission
We’ll ask you to film yourself performing basic food safety tasks—like washing your hands correctly, sanitising work surfaces, and storing food safely. These are short, 2-minute videos you can record in your own time using a phone or webcam.
Prefer showing off your skills live? You can also book a Zoom call with one of our assessors to demonstrate your skills in real time. The whole process is designed to be quick, easy, and efficient.
2. Online Third-Party Observation Report
You’ll also need someone with food industry experience (minimum 18 months) to observe you performing key food safety tasks on the job. From your course dashboard, you can send a secure link to your observer, whether that’s a supervisor, manager, or colleague.
They’ll fill out a simple digital report, no printing, signing, or scanning required. Once submitted, it’s automatically added to your progress.
